Ingredients
- 4 cups onions, finely sliced
- 4 cups peeled tomatoes (may be canned and drained well), finely sliced
- 3 Tablespoons oil
- Lemon juice, to taste
- ½ cup fresh cilantro leaves, chopped
- Salt and pepper, to taste
Procedure
- Place the sliced onions in a bowl.
- Cover with cold water and let set for 1 hour, then drain the water.
- Mix onions with the tomatoes on a large platter.
- Season with salt and pepper.
- Pour oil and lemon juice on mixture.
- Mix and serve with chopped cilantro sprinkled on top.
Serves 4.
