Ingredients
- ½ cup flour
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 pound lean pork loin, cut into bite-size pieces
- 3 Tablespoons peanut or vegetable oil
- 2 green peppers cut in large pieces
- 1 onion, sliced
- 1 carrot, sliced
- ½ cup pineapple chunks
- ½ cup pineapple juice
- ¼ cup white vinegar
- 2 Tablespoons soy sauce
- ¼ cup brown sugar
- 2 Tablespoons cornstarch
- A few drops red food coloring (traditional, but optional)
- Boiled rice, warm
Procedure
- Prepare rice according to package and keep warm.
- Mix flour, salt, and pepper in a large plastic bag with a locking seal.
- Add the pork pieces to the bag and seal.
- Shake the bag well to coat each piece.
- Remove the pork and throw the bag away.
- Heat the oil in a large frying pan.
- Cook the pork pieces on all sides until brown.
- Lower the heat and cook for 20 minutes.
- Add the peppers, onions, and carrots, and cook for 5 minutes.
- Stir in pineapple, pineapple juice, vinegar, soy sauce, brown sugar, cornstarch, and food coloring.
- Cook until the mixture is hot.
- Serve over cooked rice.
