
Ingredients:
- 500g boned chicken breast
- 100g mushrooms
- 2 tablespoons parsely leaves
- 2 cloves of garlic
- a tablespoon of lemon juice
- a teaspoon of salt
- a pinch of ground pepper
- one egg
- 50g breadcrumbs
- extra virgin olive oil, for frying.
Mushroom sauce:
- 200g mushrooms
- 100g peeled onion
- 70ml extra virgin olive oil
- 20g flour
- 250ml whole milk
- salt
- pepper
- nutmeg
Steps:
- In a food processor, mix the chicken breast with the mushrooms (cleaned well and chopped), the parsley, the peeled garlic, the lemon juice, the salt, pepper and egg. Blend until you get a smooth mixture, adding a few breadcrumbs, so the mixture becomes more moldable.
- With your hands prepare medium-sized hamburgers and keep in the fridge.
- Meanwhile, prepare the sauce by heating the oil in a saucepan and adding the finely chopped mushrooms and onion. Leave to sauté for 10 minutes on a medium heat. Then add the flour and stir for a few seconds.
- Cover with the milk, season to taste with the salt, pepper and nutmeg, and leave to cook on a low heat for 10 minutes, stirring frequently. At the end, triturate with a blender until you get a smooth sauce, and adjust the seasoning, if necessary.
