- 75g (3 oz) dried lentils
- 350ml (12 fl oz) water
- 1/2 (400g) tin chickpeas, drained
- 2 tomatoes, chopped
- 4 spring onions, chopped
- 2 green chillies, minced
- 1 green pepper, chopped
- 1/2 yellow pepper, chopped
- 1 red pepper, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- handful chopped fresh coriander
- salt to taste
Preparation method
Prep: 15 mins | Cook: 30 mins
1.
Place lentils and water in a pot. Bring water to the boil, then reduce to simmer. Cook for 30 minutes or until tender.

In a medium mixing bowl combine lentils with remaining ingredients. Toss well. Chill for 20 minutes. Serve chilled.
