Ingredients

  • Shortcrust
  • 250 g flour
  • 125 g soft butter cut into small pieces
  • 1 egg yolk
  • 50 ml of water

covering

  • 3 young French garlic bulbs ( Ail Rose de Lautrec)
  • 1 tablespoon olive oil
  • 3 tablespoons balsamic vinegar
  • 220 ml water
  • 1 tsp sugar
  • 2 tsp fresh thyme, finely chopped
  • Salt & pepper
  • 120 g soft goat cheese
  • 120 g goat hard cheese
  • 2 eggs
  • 200 g crème fraîche
