
Ingredients:
- 1/2 cup (115g) unsalted butter
- 2/3 cup sugar
- 2 eggs and 2 egg yolks
- 1 teaspoon vanilla extract
- 1 cup flour
- 1/2 cup cornstarch
- 1 1/2 teaspoons baking powder
- pinch of salt
- 1/4 cup plain yogurt
Method:
- Preheat the oven to 180 ˚ C. In a bowl, sift the flour, cornstarch, baking powder and salt together. Beat the butter and sugar until the mixture turns pale and fluffy. It takes about 4 minutes.
- Add the eggs and yolks, one by one. Finally, stir in the vanilla extract.
- Alternate adding the dry ingredients and yogurt to the batter, beating only until incorporated.
- Bake for 18 minutes or until a toothpick inserted into the center of each comes out clean. Expect cool completely for the next step!
