
Ingredients
- 3 eggs
- 125g plain flour
- 1 tablespoon baking powder
- 25g castor sugar
- 235 ml milk
Method
- Separate the whites from the yolks of the eggs.
- Whisk the egg whites until stiff.
- Sieve the flour and baking powder into a bowl and add to this the sugar, yokes and milk. Whisk together until smooth.
- Fold the egg whites into the batter.
- Lightly oil a pan and place over a medium heat.
- Pour an ice-cream scoop of batter into the pan and cook until golden brown on both sides. Continue until all the batter is used up.
- Stack the pancakes as they are cooked (using baking paper in between each one) and keep warm in an oven. Serve with maple syrup.
