
Ingredients:
- 3 tbsp canola oil
- 1 tsp turmeric
- 3 tomatoes or a can of diced tomatoes (I like to use fresh in this recipe)
- 2 tsp cumin
- 4 tbsp chopped cilantro
- 1 lb (2 1/4 cup) lentils
- 1 red onion, diced
- 1 bell pepper, diced (I like orange or yellow best in this recipe)
- 6 garlic cloves, crushed or finely chopped
- 3 tsp salt
- 7 cups water
Directions:
- Heat the oil on medium heat in large sauce pan
- Add turmeric, onion, bell pepper, tomato, garlic, cumin, salt and 2 tbsp of cilantro
- Cook stirring occasionally until all ingredients have softened, about 5 minutes
- Add water and increase heat to bring water to boil.
