Ingredients
- 1 1/2 cupsQuick-cooking oatmeal
- 1/4 cupsSugar
- 6 tablespoonsButter; Softened
- 2 tablespoonsCocoa Powder
- 1/2 tablespoonsVanilla extract
- 1/2 - 1 cupsCoffee; Brewed, room temperature
- 1 boxCoconut or pearl sugar
Preparation
- Combine butter, sugar, oats (mind you don't use the instant packets), cocoa powder, vanilla, and coffee.
- Roll into balls about the size of a meatball.
- Roll balls in coconut or pearl sugar to decorate.
- Eat right away, or refrigerate, or freeze if you prefer a harder consistency
